Desde <strong>Pobill Ecol\u00f2gics<\/strong> podemos decir que es un hombre hecho a s\u00ed mismo. Siempre le ha gustado la cocina desde muy peque\u00f1o y lo transmite. Pero no fue hasta mayor que decidi\u00f3 formarse en su pasi\u00f3n. Tambi\u00e9n aprendi\u00f3 Panaderia, Brioxeria y Pans artesanos con <strong>Carlos Morente y Toni \u00c1vila<\/strong>, e hizo el Curso de Docencia para Formaci\u00f3n Profesional de Labora.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Adem\u00e1s, ha trabajado en restaurantes punteros como en el restaurante con dos estrellas Michelin <a href=\"https:\/\/www.lescaleta.com\/\">L&#8217;Escaleta de Cocentaina,<\/a> o<a href=\"https:\/\/www.rubenmiralles.com\/\"> Rub\u00e9n Miralles<\/a> de Vinar\u00f2s, donde estuvo 4 a\u00f1os. Fue en este \u00faltimo establecimiento, junto con el equipo, que fueron finalistas en el Concurso de la Gamba de S\u00f3ller o finalistas del Concurso de Cocina del Langostino de Vinar\u00f2s. Rectificar de sao, a\u00f1adiendo sal si fuera necesario, y m\u00e1s jengibre fresco rayado si se quiere.<\/span><\/li>\n<\/ol>\n<h3><strong>Elaboraci\u00f3n manos de cerdo<\/strong><\/h3>\n<ol>\n<li class=\"p1\"><span class=\"s1\">Limpiar bien las manecillas y cocerlas con la cebolla, clavos de olor y el laurel.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Deshuesar todas manecillas e ir colocando la carne en un recipiente cuadrado , al acabar refrigerar y ponerle peso encima para que quede compacto.<\/span><\/li>\n<\/ol>\n<p class=\"p1\"><span class=\"s1\">Una vez este fr\u00edo, cortar en dados y dorar antes de servir.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u00a0<\/span><\/p>\n<h3><strong>Elaboraci\u00f3n salsa crema cerveza negra<\/strong><\/h3>\n<ol>\n<li class=\"p1\"><span class=\"s1\">Pelar y lavar la cebolla y el ajo. Cortarlos en dados chicos y reservar en recipientes por separado.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Lavar la tomate, retirar cuidadosamente las semillas y proceder a cortar tambi\u00e9n en trozos muy chicos.<\/span><span class=\"s1\">\u00a0<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Poner a calzar una cazuela chiquita y a\u00f1adir el aceite de oliva. Sufrir la cebolla y, pasado un minuto y medio, agregar los ajos.<\/span><span class=\"s1\">\u00a0<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Continuar con el sufrimiento por un minuto y agregar la tomate. A\u00f1adir sal y pimienta al gusto.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Verter los 300 ml de cerveza negra en la cazuela junto a los otros ingredientes. Mover con una cuchara de madera porque todos los ingredientes se integran.
