Nutritionally, carob is a very energetic fruit: it is rich in carbohydrates that favour the maintenance of vital functions and body temperature. It is also notable for its richness in fiber (especially the soluble type, pectin), which benefits intestinal flora growth and facilitates transit (since it stimulates the peristaltic movement of the intestines).

It is also worth remembering its protein content; the amino acid named “tryptophan” is especially interesting, which is a precursor of serotonin, a substance that gives us a feeling of relaxation and tranquility. In addition, the fact that it does not contain stimulant substances, such as caffeine or theobromine, makes it especially suitable for children.

It also contains significant amounts of iron, calcium, and magnesium. Unlike cocoa, carob does not contain oxalic acid, which is a substance that acts as a “thief” of minerals and prevents the intestinal absorption of iron and calcium.
